Determining Some Quality Characteristics in Fresh and Stored Eggs by Digital Image Analysis

In this research, it was conducted to determine some quality characteristics of eggs from a commercial 12 month of age white layer stock by Digital Image Analysis. It was observed egg components such as yolk and inner thick albumen of eggs stored at 18°C and 55 % relative humidity throughout seven days were spread an extensive area than fresh eggs, because of inner thick albumen liquefaction during storage. It was also observed correlation coefficients between some characteristics varied in fresh and stored eggs. In conclusion, it was observed Digital Image Process method will be successfully used to determine some egg quality characteristics.
